Spicy Pork Tamales

I make my Traditional Spicy Pork Tamales with carefully selected pork shoulder, slow-cooked until tender and shredded for the perfect bite. The pork is blended with a rich, traditional chile sauce made with chile de árbol for an extra kick of heat. The filling is wrapped in stone-ground corn masa and finished by hand in a traditional corn husk.

Masa (corn, water, lime), water, pork, lard (BHT & BHA added to help protect flavor), corn flour (white corn, traces of lime), jalapeño pepper, salt, seasoning (paprika, salt, garlic, cumin), ancho pepper, guajillo pepper, garlic, jalapeño powder, arbol pepper, spices, corn starch.

STEAMER:
Fill steamer around 1⁄4 full with water, cover and bring to boil. Stack the
tamales inside the steamer basket with the open end of the tamale facing
upwards. Steam tamales for approximately 5 – 10 minutes, or until soft and
moist. (If less than a dozen, steam for less time.) Remove the tamales with
tongs as they will be hot.

MICROWAVE:
Remove tamales from package and place on a microwave-safe plate.
Cover the tamales with a damp paper towel. Microwave for 2-3 minutes or
until soft and moist. (If less than a dozen, heat for less time.)
