Pork Tamales (Grandes)

I make my Grande Pork Tamales for those who want a bigger, heartier tamale. Each one is generously filled with tender, slow-cooked pork shoulder, shredded and blended with a rich, traditional chile sauce. The filling is wrapped in stone-ground corn masa and finished by hand in a traditional corn husk.

Masa (corn, water, lime), pork, water, lard (bht & bha added to help protect flavor), corn flour (white corn, traces of lime), salt, ancho pepper, guajillo pepper, paprika, spices, garlic powder.

STEAMER:
Fill steamer around 1⁄4 full with water, cover and bring to boil. Stack the
tamales inside the steamer basket with the open end of the tamale facing
upwards. Steam tamales for approximately 5 – 10 minutes, or until soft and
moist. (If less than a dozen, steam for less time.) Remove the tamales with
tongs as they will be hot.

MICROWAVE:
Remove tamales from package and place on a microwave-safe plate.
Cover the tamales with a damp paper towel. Microwave for 2-3 minutes or
until soft and moist. (If less than a dozen, heat for less time.)
