Chicken Tamales (Grandes)

I make my Grande Chicken Tamales for those who want a bigger, heartier tamale. Each one is generously filled with tender, shredded chicken blended with a fresh and bright tomatillo salsa. The filling is wrapped in stone-ground corn masa and finished by hand in a traditional corn husk.

Masa (corn, water, lime), dark meat chicken, water, lard (BHT & BHA added to help protect flavor), corn flour (white corn, traces of lime), tomatillos, salt, jalapeno pepper, seasoning (paprika, salt, garlic, cumin), garlic, cilantro, spices, corn starch, jalapeno powder, garlic powder.

STEAMER:
Fill steamer around 1⁄4 full with water, cover and bring to boil. Stack the
tamales inside the steamer basket with the open end of the tamale facing
upwards. Steam tamales for approximately 5 – 10 minutes, or until soft and
moist. (If less than a dozen, steam for less time.) Remove the tamales with
tongs as they will be hot.

MICROWAVE:
Remove tamales from package and place on a microwave-safe plate.
Cover the tamales with a damp paper towel. Microwave for 2-3 minutes or
until soft and moist. (If less than a dozen, heat for less time.)
